A Helsinki-based artisan roastery has introduced a coffee blend crafted entirely by artificial intelligence (AI), challenging traditional notions of manual craftsmanship in the coffee industry. Kaffa Roastery’s latest creation, the “AI-conic” blend, aims to revolutionize coffee production with innovative technology.
The launch of the “AI-conic” blend in Finland, a nation renowned for its avid coffee consumption, marks a significant milestone in the intersection of technology and tradition. Developed in collaboration with local AI consultancy Elev, the blend features a unique combination of beans, predominantly sourced from Brazil’s Fazenda Pinhal, curated by advanced AI algorithms inspired by models like ChatGPT and Copilot.
Svante Hampf, managing director and founder of Kaffa Roastery, expressed enthusiasm for the project, emphasizing the potential of AI to enhance traditional artisan practices in coffee roasting. Through detailed descriptions of various coffee flavors, the AI was tasked with creating an innovative blend that would captivate coffee enthusiasts.
Despite initial skepticism, the AI’s unconventional choice of four distinct coffee bean types intrigued experts. Following rigorous testing and blind tasting, Kaffa’s coffee connoisseurs unanimously agreed on the blend’s excellence, validating the AI’s contribution to the roasting process.

The blend’s label and flavor profile, meticulously crafted by AI, highlight its well-balanced sweetness and ripe fruit notes.
